Nature's Jewels

I have always loved how pomegranate seeds look like rubies.


It makes the fruit that much more fun to eat. Here are the enchiladas we made today.

I thought they looked pretty cool too. We didn't have any shredded cheese so we made do with this sliced pepperjack. Food is great....

    OH, that pomegranate looks so good. Reminds me of when we used to eat them in the hallway of the girl's dorm at UCA.

    I haven't eaten one in a long time - have taken to drinking the juice, now that it is so easy to get. But I believe that I spit out the seeds, for the most part. Yum!!!!
